Die Grundlage bilden Risotto-Reis, Oliven&ouml;l, Schalotten, trockener Wei&szlig;wein und hei&szlig;e Br&uuml;he, erg&auml;nzt durch Butter und Parmesan zur Verfeinerung. Wir haben das Grundrezept noch verfeinert und daraus ein Risotto mit gr&uuml;nem Spargel, Erbsen und Steinpilzen kreiert. Je nach Saison und pers&ouml;nlichem Geschmack kannst auch du dein Risotto noch variieren, z.B. mit frischen Kr&auml;uter, verschiedenem Gem&uuml;se, Muscheln oder Meerestieren.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-welcher-reis-fur-risotto\">Welcher Reis f&#xFC;r Risotto?<\/h2>\n\n\n\n<p>F&#xFC;r ein gelungenes <a href=\"https:\/\/de.wikipedia.org\/wiki\/Risotto\" target=\"_blank\" rel=\"noreferrer noopener\">Risotto<\/a> spielt der richtige Reis eine entscheidende Rolle. Arborio, Carnaroli oder Vialone sind die bekanntesten Sorten, wobei Vialone einen etwas s&#xE4;migeren und Carnaroli einen k&#xF6;rnigeren Risotto ergibt. <\/p>\n\n\n\n<p>Bruchreis, der h&#xE4;ufig als Milchreis verkauft wird, ist nicht geeignet, da er bei der Zubereitung nicht die gew&#xFC;nschte Konsistenz erh&#xE4;lt. Langkornreis ist, unabh&#xE4;ngig von der Qualit&#xE4;t, f&#xFC;r Risotto ebenfalls ungeeignet, da er bissfest gegart zu wenig der f&#xFC;r die s&#xE4;mige Konsistenz verantwortlichen&#xA0;St&#xE4;rke freisetzt. Niemals sollte Parboiled-Reis verwendet werden.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-wie-gelingt-mein-risotto\">Wie gelingt mein Risotto?<\/h2>\n\n\n\n<p>Die Kunst besteht darin, den Risotto al dente zu garen, bissfest und niemals pampig. Ein gelungener Risotto bildet eine Welle (&#x201E;all&#x2019;onda&#x201C;), wenn man ihn sanft im Teller schwenkt. Dabei ist es wichtig zu beachten, dass der Reis immer nachzieht, daher ist es besser, ihn einen Tick zu fr&#xFC;h von der Herdplatte zu nehmen als zu sp&#xE4;t.<\/p>\n\n\n\n<p>Die Cremigkeit eines perfekten Risottos kommt nicht nur von Butter und Parmesan, sondern auch von der im Reis enthaltenen St&#xE4;rke. Das Waschen des Reises vor dem Kochen ist daher nicht ratsam, da die haftende St&#xE4;rke f&#xFC;r die nat&#xFC;rliche Bindung und geschmeidige Konsistenz sorgt.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-die-richtige-vorbereitung\">Die richtige Vorbereitung<\/h2>\n\n\n\n<p>Eine gute Vorbereitung ist der Schl&#xFC;ssel zum erfolgreichen Risotto. Alle Zutaten sollten bereitstehen, einschlie&#xDF;lich der fein gehackten Schalotten. Bei der Verwendung von Gem&#xFC;se oder Meerestieren sollten diese ebenfalls vorbereitet werden. Die Br&#xFC;he sollte aufkochen, um kochend hei&#xDF; parat zu stehen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-risotto-umruhren-oder-nicht-umruhren\">Risotto umr&#xFC;hren oder nicht umr&#xFC;hren?<\/h2>\n\n\n\n<p>In der Koch-Welt herrscht eine vielf&#xE4;ltige Debatte &#xFC;ber die optimale Zubereitungsmethode. W&#xE4;hrend einige Rezepte f&#xFC;r ein st&#xE4;ndiges Umr&#xFC;hren w&#xE4;hrend des Kochens pl&#xE4;dieren, schw&#xF6;ren andere auf ein gelegentliches R&#xFC;hren, um ein Anhaften am Pfannenboden zu verhindern. Manche K&#xFC;chenchefs gehen sogar so weit, den Reis bei sanfter Hitze und geschlossenem Deckel ohne jegliches R&#xFC;hren quellen zu lassen. Aus unserer pers&#xF6;nlichen kulinarischen Perspektive heraus ist jedoch das gelegentliche Umr&#xFC;hren die beste Methode, um ein perfektes Risotto zu kreieren. Die Spitzen separat zur Seite legen.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Gem&#xFC;sebr&#xFC;he erhitzen.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Schalotte klein schneiden, in Oliven&#xF6;l bei mittlerer Hitze anschwitzen, die Spargelschnitten (ohne die Spitzen) , die eingeweichten Steinpilze und die Erbsen dazugeben und f&#xFC;r einige Minuten weiter anschwitzen. Dann den Risotto-Reis dazugeben und mit Wei&#xDF;wein abl&#xF6;schen, kurz erhitzen um den Wein sprudelnd einkochen zu lassen und dann mit 2\/3 der hie&#xDF;en Gem&#xFC;sebr&#xFC;he und etwas von dem Steinpilzwasser bedecken und f&#xFC;r ca. 10 Minuten bei geringer Hitze mit geschlossenem Deckel k&#xF6;cheln lassen.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Nun die Spargelspitzen dazugeben. Je nach Konsistenz noch von dem letzten Drittel der Gem&#xFC;sebr&#xFC;he dazugeben und f&#xFC;r weitere 5 Minuten im geschlossen Topf k&#xF6;cheln lassen. Dabei wenig umr&#xFC;hren, damit der Risotto-Reis nicht zerf&#xE4;llt. Zum Schluss noch Butter, Parmesan und einen Spritzer Zitronensaft dazugeben.
