Ab und zu den Braten umdrehen.&#xA0;Das Fleisch aus dem Topf nehmen, das Gem&#xFC;se aus der&#xA0;Weinbeize&#xA0;nehmen und durch ein Sieb passieren. Die Weinbeize&#xA0;zur Seite stellen.&#xA0;Das &#xFC;brige Gem&#xFC;se schneiden&#xA0;und zusammen mit den beiden&#xA0;2 Lorbeerbl&#xE4;ttern&#xA0;und&#xA0;dem&#xA0;Rosmarin&#xA0;in einen Br&#xE4;ter geben. Das Fleisch darauflegen.&#xA0;Die Weinbeize angie&#xDF;en und so viel Br&#xFC;he zugeben, dass der Braten zu 2\/3 Drittel bedeckt ist.&#xA0;Den Br&#xE4;ter f&#xFC;r etwa drei bis vier Stunden in den auf 150 Grad Celsius vorgeheizten Backofen schieben.&#xA0;Ist das Fleisch gar,&#xA0;dieses aus&#xA0;dem&#xA0;Br&#xE4;ter&#xA0;nehmen. Die Sauce passieren. Nochmals ein wenig Rotwein beif&#xFC;gen, reduzieren lassen. Vor dem Servieren die Sauce mit einigen Butterflocken und evtl.
